Fondo San Giuseppe has organic farming as a creed, and are defenders of early-19th century agriculture, when fertilizer and pesticide industries were still unknown. They want their soils to thrive and grow and express terroir, and to be unalterated by synthetic products and chemicals. The poor and stony limestone soils of the tiny Chardonnay vineyard offers low yields, but an excellent concentration of flavour in the grapes themselves. The wine shows beautiful stone fruit and pineapple characteristics, as well as a slightly oxidative touch that lends a touch of nuttiness to the finish.
