Located in the north-of Spain, is the winery Loxarel, lead by enologist Josep Mitjans who goes back to the way his ancestors made wine thousands of years ago. He farms biodynamically, making sure that there’s little intervention at the vineyard and in the cellar. He’s a pioneer in recovering the use of clay amphoras to ferment his wines. This 2018 Ops is a blend of Garnacha and Samos (better known as Carignan) that’s aged in 720 litre clay amphora for 3 months. The resulting wine is fresh and delicious with great acidity and a slightly wild, rugged character that is quite attractive. It’s very fruit driven with blackberries and strawberries but with a hint of leafy vegetables.
