Viñedos y Bodegas Pablo is a family-owned winery located in the PDO area of Cariñena. They mainly grow Garnacha, Cariñena, as well as the rare and almost extinct Vidadillo grape variety.
Vidadillo is a grape variety that is incredibly resistant to drought and diseases, capable of producing wines of elegance and concentration. It's unlikely you'll come across this grape anywhere else, so we highly recommend it as a "must try" for all wine lovers.
The vines are very old, some of them around a 100 years old and very low yielding, leading extremely concentrated flavours in the grapes.
The grapes are hand harvested and fermented by plot and see 10 months of oak aging.
On the nose it's floral and packed with black fruits, figs, plum compote and spices from the oak. On the palate the tannin are present but not annoying, concentrated flavours and extraordinary balance.
A superb example of this almost extinct variety, one of our favourites for sure.
