Vineyards: The grapes come primarily from two vineyards, ‘San Isidro del Pinar’ and ‘Andosilla,’ spanning the pre pyrenees region as well as Ribera Alta. They are both low yielding vineyards located in the influence area of the Bardenas Reales desert, the biggest desert in Europe. The very poor and arid clay calcareous soil, the dry weather and the big contrast of temperature between the day and the night provide the grapes with high concentration and a perfect balance.
Vinification: The grapes were destemmed, pressed, and fermented in large concrete vats. The wine was racked once and aged in concrete for 6 months on its fine lees. Bottled with a small sulphite addition. Unfined and unfiltered.
