Valued for its aromatic character, elevated acidity, and delicate saline notes, Galician Albariño is a relatively recent addition to California, having been introduced in the 1990s. Currently, it comprises less than 2% of the region's vineyards.
The fruit undergoes whole-cluster pressing, followed by settling for two days, and then fermentation in tanks using native yeast for a duration of three weeks. Secondary fermentation takes place in the bottle over two months before disgorgement, with a small dosage added.
The outcome is a light, refreshing, and enjoyable sip characterized by vibrant flavors of green apple, stone fruit, kumquat, and hints of spicy florals. Perfect as an apéritif, this wine also pairs effortlessly with salads, picnic dishes, and particularly seafood.
