Thierry steadfastly follows organic practices within the vineyards. For the majority of vintages, the grapes undergo whole bunch fermentation. Minimal quantities of SO2 are typically introduced during both the fermentation process and shortly before bottling. The wine undergoes a gentle filtration process. The grapes experience a cold maceration at 10 degrees Celsius, followed by a three-week period of maceration.
Very beautiful ruby colour. Black fruits, cocoa and mocha as well as spices. Dense yet delicate, juicy, texture finely woven with prominent tannins.
