Located at the heart of the Loire Valley and drawing from their extensive travel experiences, their winemaking style is well-established, utilizing old oak and concrete for vinification. Specifically, for the Cuisine de Ma Mere, the entire process is conducted in concrete to preserve the fruit. Consequently, this Chinon is notably accessible, featuring abundant bright fruit and herbaceous notes. The Cuisine de ma mère, sourced from their young vines grown in clay and sand, is crafted for immediate enjoyment. The grapes undergo destemming, a five-day skin maceration, fermentation, and aging in concrete.
