The term "Ancestral Method" encapsulates the practice of crafting sparkling wine just as our forebears did. This was precisely the aspiration of Evelyn, the vintner: using this overlooked indigenous grape varietie and vinifying it in the manner of her grandfather. Through a single fermentation process, a delightful and subtle effervescence is achieved. Fermentation commences in the tank and concludes in the bottle during the subsequent spring after harvest, transpiring organically. Human involvement remains intentionally limited. The approach is entirely natural and unfiltered, resulting in a fruity and utterly delectable outcome!
Perfect with aperitif, salumi and cheeses. The acidity pairs very well with fat fish dishes.
