Viticulture: Biodynamic, Polyculture and agroforestry Vineyards: L’Antica Quercia is a single plot of 25 ha located between Venice and the Dolomites where vines, olives and pomegranate trees grow in alternating lines. There are two ancient oaks that watch over the estate, and La Querica means ‘The Oak’. The Glera is trained on double-arched canes, and grown on the western slope of the estate.
Vinification: This is a completely natural colfondo, made without any additions, and re-fermented without the use of sugar or yeasts. The base wine is manually harvested in crates, destemmed and prepared using indigenous foot inoculation and spontaneous fermentation. It is left to age on the yeasts over the winter and rests in tank until the following spring. At that point, grape must from the same harvest and same vineyard (that has been kept at around -1 degree) is added to kickstart the secondary fermentation on its own natural yeasts. The wine is then bottled on the fourth new moon of the year following harvest to finish fermentation in the bottle and stays on lees for 12-18 months before release. Undisgorged, unfined and unfiltered.
