The grape harvest is meticulously carried out by hand, with two-thirds of the yield undergoing whole bunch fermentation while the remainder is destemmed before a three-week maceration process.
After pressing, each plot's grapes are vinified separately using indigenous yeast. The resulting wines are then aged for a year in a combination of tanks and 500-liter barrels within the domaine's troglodyte cellars, carved from the local tufa stone. Maintained at a consistent temperature of 13 to 14 degrees Celsius year-round, these cellars provide an ideal environment for wine maturation.
This Malbec boasts a deep hue and aromas of plums, spices, and subtle herbal nuances. Its palate is enveloped by structured tannins, offering a juicy and refreshing experience with an alluring aromatic charm. Best enjoyed after a few years of cellaring to fully appreciate its depth and complexity.
