Harvest by hand.Grapes from a single vineyard of Encruzado variety at Quinta do Ribeiro Santo. Gentle pressing; selection of the must and decanting at low temperatures. Spontaneous fermentation with indigenous yeast, followed by ageing in stainless steel vats. A wine made following the tenants of a low intervention philosophy.
